Funky Veggie's healthy brunch recipes

This weekend, take advantage of the nice weather and prepare a delicious and healthy brunch to share with your friends and family with the recipes of Funky Veggie. On the menu, prepare a homemade granola flavored with Matcha, as well as a fruity smoothie bowl rich in vitamins to fill up on energy.

Matcha Granola

An easy-to-make Matcha granola to enjoy at a healthy and tasty brunch this weekend!

For 4 to 6 servings:

- 75 g. oatmeal

- 25 g. rice flakes (or oat flakes)

- 25 g. grated coconut

- 10 g. chia seeds

- 40 g. nuts (almonds, cashews, walnuts, hazelnuts, etc.)

- 1/2 teaspoon matcha powder

- 1/2 teaspoon ground cardamom (optional)

- 30 g. maple syrup

- 30 g. melted coconut oil

- 1 teaspoon vanilla extract

- 15 g. coconut chips

Preheat the oven to 170°C and line a baking tray with baking paper.

In a large bowl, mix the oats, rice flakes, grated coconut, chia seeds, walnuts, matcha and cardamom.

Add the maple syrup, melted coconut oil and vanilla extract. Mix with a spatula to coat all ingredients and distribute the matcha evenly.

Spread the mixture on the baking tray in a compact, even layer and bake for 15 min. Then turn the baking tray so that the side at the bottom of the oven is on the door side, without mixing the granola, and bake for another 10 min. Just before the end of the baking time, add the coconut chips and bake for another 2 min until the granola is golden brown.

Remove the granola from the oven and allow it to cool completely, for at least 30 minutes, before breaking it into nuggets. Store the granola in an airtight box in a dry place.

Enjoy it as is or with vegetable yoghurt, fresh fruit or as a topping for a smoothie :)

The Smoothie Bowl

Get funky with this colourful smoothie bowl! Perfect with homemade matcha granola.

For 4 people, you need :

- 4 bananas

- 250 g. fresh fruit (depending on the season) or frozen fruit (here we chose kiwis for the creamy base)

- 3 handfuls of spinach

- 45 cl. almond milk

Cut the bananas into slices and freeze them. Prepare a quantity in advance, to use as and when you feel like making a smoothie!

Rinse the fruit and spinach if necessary.

In a food processor, blend all ingredients until smooth. Unleash your creativity and sprinkle the smoothie bowl with little treats: slivered almonds, goji berries, Veggie Funky Heart Ball cut in half, raw cacao nibs, strawberries, hemp seeds, shredded coconut, banana slices... Be creative. The matcha granola recipe is perfect in toppings to match the smoothie!
