The Green Gazpacho
Funky Veggie revisits the traditional Andalusian gazpacho to offer you an innovative and delicious green version.
For 1 large glass of green gazpacho, you need:
• 50 g. of zucchini
• 100 g. cucumber
• 70 g of green pepper
• 1/4 bunch of fresh coriander
• 1/4 bunch of fresh basil
• 1/4 bunch of fresh mint
• 1 tablespoon of olive oil
• 2 tablespoons of vegetable yogurt
• 1 teaspoon lime juice
• 60 ml. of water
Wash and cut the zucchini and cucumber into large cubes. Wash, seed and cut the green pepper into strips. Wash and roughly chop the coriander, basil and mint.
Mix all the ingredients in a blender or mixer until perfectly smooth and creamy. If necessary, add water until you get the desired consistency.
Enjoy chilled as an aperitif, starter or for a light lunch with crackers and salad. Enjoy!
Fruity detox waters
Discover the recipes for fruity detox waters, ideal for refreshing yourself all summer long while taking care of your body and skin naturally!
For 100% detox water (as in the photo):
• 5 cm of grated ginger
• 1/2 cucumber, sliced
• 1 lemon, sliced
• a few mint leaves
For refreshing water:
• 1/4 watermelon in pieces
• 1/2 cucumber, sliced
• a few mint leaves
For a piña colada style water:
• a few pieces of pineapple
• a few mint leaves
For mulled wine-style water:
• 4 star anise
• 1 cinnamon stick
• 1 orange, sliced
For red fruit water:
• 1 handful of blueberries
• handful of strawberries cut in half
• a few goji berries
For green power water:
• 1/2 kiwi in strips
• 1/2 Granny Smith apple, sliced
• a few basil leaves
Pour the ingredients into 1L of water and let infuse for at least 2 hours (ideally overnight).
