Green Gaspacho
Funky Veggie revisits the traditional Andalusian gazpacho to offer you an innovative and tasty green version.
For 1 big glass of green gazpacho, you need:
- 50 g. of zucchini
- 100 g. of cucumber
- 70 g. of green bell pepper
- 1/4 bunch of fresh coriander
- 1/4 bunch of fresh basil
- 1/4 bunch of fresh mint
- 1 tablespoon of olive oil
- 2 tablespoons of vegetable yogurt
- 1 teaspoon of lime juice
- 60 ml. of water
Wash and cut the courgette and cucumber into large cubes. Wash, seed and slice the green pepper. Wash and roughly chop the coriander, basil and mint.
Blend all the ingredients in a blender to obtain a smooth and creamy mixture. If necessary, add water until the desired consistency is reached.
Enjoy chilled as an aperitif, starter or for a light lunch with crackers and a salad. Enjoy!
Fruity detox waters
Discover the recipes of the fruity detox waters, ideal to refresh yourself all summer long while taking care of your body and your skin naturally!
For a 100% detox water (as shown in the photo):
- 5 cm of grated ginger
- 1/2 cucumber in strips
- 1 lemon in strips
- some mint leaves
For refreshing water:
- 1/4 watermelon in pieces
- 1/2 cucumber in strips
- a few mint leaves
For a piña colada-style water :
- a few pineapple pieces
- a few mint leaves
For a mulled wine style water:
- 4 star anise
- 1 cinnamon stick
- 1 orange in strips
For a red fruit water :
- 1 handful of blueberries
- handful of halved strawberries
- some goji berries
For green power water :
- 1/2 kiwi in strips
- 1/2 Granny apple in strips
- some basil leaves
Pour the ingredients into 1L of water and leave to infuse for at least 2 hours (ideally overnight).
